Black tea leaves, natural flavoring

Boil 2,500 ml of water, then remove from heat.
Add 1 bag (150 g) of Thai tea leaves, stir 4 times clockwise and 1 half-circle. Cover and steep for 30 minutes, stirring again at 15 minutes.
After 30 minutes, add 2,500 ml of ice and stir until fully melted.
Strain out tea leaves using a filter cloth.
Yields 3,000 ml of Thai tea concentrate.
Measure 15 g of Thai tea leaves into the portafilter.
Pre-wet with a small amount of water (count 1–10) to bloom the tea.
Extract 120 ml of tea.
Add 1 tbsp brown sugar, 30 ml sweetened condensed milk, and 30 ml evaporated milk. Mix well.
Pour over ice and garnish as desired.
For best taste, do not store brewed tea longer than 7 days in the refrigerator.
After brewing a large batch, let the tea sit for 1 hour before serving for the richest flavor.
